Baked Brie with Smokey Chipotle Honey

Warm, creamy, caramalised Brie Cheese fresh from the oven, topped with baked red grapes a big ol' drizzle of our Smoky Chipotle Honey - it’s the ultimate winter comfort food. 

Perfect for a sharing with ya mates and crusty French bread. We like to serve ours with a glass (or bottle!) of natural wine Vino Blanco from Lucy Margaux. 

 

INGREDIENTS:

  • Drunken Sailor Smokey Chipotle Honey
  • x1 whole round Brie Cheese (doesn't need to be a anything fancy!)
  • Small bunch red grapes
  • Fresh thyme 
  • Fresh crusty bread - we love to tear into a crusty French baguette here

 

METHOD:

  • Preheat the oven to 160°C 
  • Pop a small bunch of grapes into the oven to pre-roast for about 30 minutes
  • Once your grapes are roasted increase the temp to 180°C
  • If your Brie Cheese comes in a poplar or spruce box - remove all other packing, line the box with parchment paper, pop the Brie back into the box
  • If your Brie Cheese doesn't come in one of these boxes, you can just use any similar sized ramekin lined with parchment paper - you want the Brie to fit in the ramekin snuggly so it holds it's shape as it heats 
  • Drizzle on some  Drunken Sailor Smokey Chipotle Honey
  • Whack your Brie into the oven for 20 minutes
  • Once the Brie looks all gooey and soft, take it outta the oven 
  • Place the pre-roasted grapes and some thyme onto the Brie Cheese
  • Heavily drizzle the Brie with our Drunken Sailor Smokey Chipotle Honey 
  • Serve in it's box / ramekin with chunks of the fresh crusty bread - all dig in!
