Cheesy Bacon & Egg Roll with Drunken Sailor Smokey Tomato Relish

The ultimate hangover hero: a cheesy bacon and egg roll stacked on a soft potato bun, dripping with our Drunken Sailor Smoky Tomato Relish.

It’s the cure you didn’t know you needed - and it hits different every single time.

Best eaten with a Bloody Mary in hand, and zero regrets from last night! 

 

INGREDIENTS:

  • Drunken Sailor Smokey Tomato Relish 
  • Potato bread bun (1 bun per serve) - you can use any bun or Turkish bread for this
  • Eggs (1 per bun) 
  • Quality Bacon
  • Sliced Cheddar Cheese (doesn't need to be anything fancy!)
  • Rocket 
  • Olive Oil  
  • Salt & Pepper seasoning
  • Kewpie Mayonnaise 

 

METHOD:

  • Heat up a pan on the stove top with olive oil
  • Once hot, place the cut bun inside down to gently fry off and toast - remove 
  • Smother Drunken Sailor Smokey Tomato Relish onto the inside bun base, and squirt some Kewpie mayonnaise onto the inside bun lid
  • Dress your rocket in a bowl with olive oil, and salt & pepper - place to one side
  • Now, whack the bacon into the pan to fry off 
  • In the meantime, whisk 2 eggs per serve into a small bowl - place to one side 
  • Once bacon is cooked to your liking, remove the bacon, and pour the whisked eggs into the pan (we wanna keep that bacon-oil in there for flavour!)
  • Allow the whisked eggs to coat the pan, gently folding the eggs into the centre (almost like an omelette)
  • Once eggs are cooked place a slice of the cheddar cheese into the centre and fold the eggs onto the cheese to make a small square "parcel" of cheesy eggs
  • Now lets build the B&E bun: grab a handful of rocket onto the bun base, then whack the bacon onto the rocket, then the cheesy egg - and now pop the bun lid
  • Too easy - you are ready to devour and cure that hangover!
