Classic Aussie Jam Drops - With A Drunken Sailor Twist!

These easy jam drops are a classic Aussie biscuit with a twist - buttery, simple to make and perfect for using any of your fave Drunken Sailor jams.
Ideal for entertaining, morning tea at work, or a sweet treat at home! Bonus; kids always love 'em!
INGREDIENTS:
- Any of your fave Drunken Sailor jam flavours - here we used Drunken Sailor Strawberry Rose Jam, Drunken Sailor Forest Fruit Jam, Drunken Sailor Pear, Vanilla and Whisky Jam
- 225g Softened Butter
- 150g Caster Sugar
- 380g Plain Flour
- 2 Tsp Vanilla Extract
- 1 Egg
- Pinch of Salt
METHOD:
- Set the over to 180 degrees C
- Chuck your 225g softened butter and 150g caster sugar into a mixing bowl, and beat together with a hand whisk until smooth
- Using a baking spatula bring the whisked butter and sugar into the centre of the bowl together
- Add in 2 Tsp of vanilla extract
- Crack 1 egg into the mixture and a pinch of salt, then whisk altogether again
- Once combined, add in the plain flour and whisk until you get a crumbly mixture
- Grab your lined baking tray
- Roll mixture into individual little balls (about golf ball size), flatten them, and then make a finger indent in the centre, which we will fill with jam.
- Once you have rolled and flattened all the dough onto your baking tray, time to fill each indent with jam - a small dollop of any Drunken Sailor flavour you like!
- Ready to go into the oven - 180 degree C for 15 minutes.
- Once the jam drops are cooked and lightly golden, remove from the oven, allow to cool and the jam to set - then ready for your cuppa tea and time to eat!
