Prawn Cocktail Cups

Fresh, colourful and pretty impressive to look at (but super easy to make!) 

Take ya seafood lunch, entree or cocktail canapé to the next level, using our best-selling (and award-winning!) Drunken Sailor Smokey Tomato Relish in ya sauce. 

Let me tell ya how below...!

 

INGREDIENTS:

  • 1x Drunken Sailor Smokey Tomato Relish (we'll blitz it up)
  • 500g Fresh whole cooked prawns (the fresher the better - we love peeling them ourselves!)
  • 1x Cos or baby gem lettuce (you want it crispy with "bowl" shape leaves 
  • 1x Avocado
  • 1 spring of fresh dill 
  • To make the mayonnaise base for the Smokey Tomato prawn dressing: 
    • 1x Egg
    • 250ml Vegetable Oil or Olive Oil
    • 1x table spoon white wine vinegar 
    • Salt & Pepper 

METHOD:

  • Peel your big-boy prawns, removing the head, shell, legs and poop-shoot (if you wish)
  • Cut prawns into about 1cm chunks - leave to one side 
  • Remove the outer layers of a cos or baby gem lettuce (these can used later for a salad) - you want to peel off and use the slightly crispier inside leaves for the cups. Arrange these on a plate

 

  • Now to make your prawn cocktail dressing: 
  • Blitz up with a powered blender Drunken Sailor Smokey Tomato Relish so you get more of a slightly smoother sauce consistency. Put to one side.
  • Make your mayonnaise base (or you could use a quality shop-bought mayo)
  • Crack an egg into a bowl or pyrex jug, add white wine vinegar, salt and pepper and start to blitz together, slowly add olive oil or vegetable oil (little bit at a time as you blitz) 
  • Once you have the mayo consistency, add in your blitzed Drunken Sailor Smokey Tomato Relish to make the dressing

 

  • Now to assemble: 
  • Slice up the avocado
  • Lay slices into your lettuce cup arranged on the plate 
  • Sprinkle on the prawn chunks 
  • Drizzle over lashings of the prawn cocktail dressing

DONE! Now time to enjoy that crunch.
