Ultimate Comfort Food - Peach Cobbler with Drunken Sailor Peach, Rosemary & Brandy Jam

Legends, this easy Peach Cobbler is the ULTIMATE Autumn comfort food dessert - warm, golden and packed with flavour!
Made with jarred or canned peaches and a generous spoonful of Drunken Sailor Peach, Rosemary and Brandy Jam, it’s a simple, no-fuss recipe that delivers big on taste.
Chuck it in the oven, crack a drink, and let dessert sort itself out.
INGREDIENTS:
- Drunken Sailor Peach, Rosemary and Brandy Jam
- Jar or Tin of Peaches
- 80g Softened Butter
- 150g Caster Sugar
- 2 Eggs
- 125ml of Buttermilk
- 240g Flour
- 1/2 tsp Baking Powder
- Demerara Sugar to sprinkle on top
METHOD:
- Set the over to 180 degrees C
- Whack your 80g softened butter and 150g caster sugar into a mixing bowl and whisk together until light and fluffy
- Next, gradually incorporate all of the eggs as you whisk
- Then, add 125ml of Buttermilk and whisk
- Finally add the flour and Baking Powder to make a nice thick cake batter mixture
- Using a rectangle oven-proof baking dish lay chunks of the tin/jar peaches into the bottom of the dish, along with a good pour of the peach syrup
- Grab our Drunken Sailor Peach, Rosemary and Brandy Jam and mix about 1/2 a jar into the peaches in the bottom of the dish
- Next, dollop big spoonfuls of the cake batter mixture on top of the peaches in the dish - this doesn't need to be spread evenly of neatly, some of the peaches can be showing through. We want this to be rustic!
- Sprinkle the Demerara sugar on the top of the mixture, to help give a crispy, sugary taste at the end
- Finally - chuck this in the oven at 180 degrees C for 35-40 minutes, until it's golden brown on top
- Once ready, take outta the oven and serve up with some thick vanilla ice-cream and another dollop of Drunken Sailor Peach, Rosemary and Brandy Jam - bloody perfect! Get cozy and enjoy.
